Secrets to Caramelized Hazelnuts
Step 1: Roast the hazelnuts just until they are fragrant and light golden brown. Starting with raw nuts will ensure fresher tasting results.
Step 2: Place roasted nuts in a clean cloth
Some skin may be stubborn
Step 4: Sugar in stainless steel pot
Step 5: Add water to make a wet sand
Step 6: Put the sugar mixture on Medium heat
You will notice the sugar getting thicker
Sugar will start to caramelize
As the color gets deeper in color,
Visually see the change in color on the plate. I prefer a darker caramel which tastes less sweet and more intense caramel flavor
Step 7: Add Roasted nuts, butter & salt to taste. Make sure not to get any sugar on your skin. When adding the butter the mixture will bubble.
Step 8: pour mixture onto a parchment lined sheetpan
