ROASTING

WHAT IS ROASTING

  • Roasting is a cooking method that uses dry heat
  • It enhances flavor through caramelization
  • Suitable for cooking a large piece of meat

WHAT IS A ROAST

  • Any piece of meat, especially red meat, that is roasted is called roast
  • Can take up to more than three hours to cook
  • The resulting meat is extremely is tender

HOW TO ROAST

  • This meat may be placed on a pan or rack
  • This ensures even distribution of heat throughout the meat
  • The oven should be heated to between 200° and 325°

BENEFITS OF ROASTING

  • Less moisture loss
  • More tender product
  • Uses less grease and oil

ROAST BEEF

INGREDIENTS

  • 3 to 3 1/2 lbs boneless rump roast
  • Olive oil
  • 8 slivers of garlic
  • Salt
  • Pepper

DIRECTIONS

  • Start with roast at room temp
  • Preheat oven to 375°
  • Make 8 incisions into the roast
  • Insert garlic in each incision
  • Spread olive oil on roast

DIRECTIONS

  • Sprinkle roast with salt and pepper
  • Place roast directly on oven rack
  • Place drip pan underneath
  • Brown at 375° for half an hour
  • Lower heat to 225 and cook for 2 1/2 hours
