HANDLING DOUGH

OVERHANDLING

  • Too much flour, liquid, or too little fat makes dough tough
  • Too much handling makes dough tough
  • Handling causes gluten to develop, which toughens the dough

HOW TO HANDLE PASTRY

  • Pastry should be handled gently and as little as possible
  • This prevents gluten from forming, which keeps it soft

HANDLING GUIDELINES

  • Don't overmix the dough while adding liquid.
  • Don't use the rolling pin too vigorously
  • Don't stretch the pastry when fitting it into the pie plate
