MY FAMILY HISTORY

My Great Grandfather was a soldier in the invasion of Normandy beach. As he lived in Europe for the duration of the war he met my Great Grandmother, he was a cook and she was a waitress after the war ended they both went back to America to get married.

During the war my Great Grandmothers brother was captured for being apart of the French underground and helping American soldiers. She walked everyday to the prison and gave him food, clothing, water, ect.

HOLIDAYS

Kadooment day is the culmination of the crop over season festival. Me and my family celebrate this every year with a small feast with family.

CULTURAL FOODS

Roti

1 lb. Flour
3tsp. Baking powder
Pinch salt
½ tsp. Saffron
½ lb. Split Peas
3 Cloves garlic
2 or 3 tsp. Ground geera (cumin)
2-3 tbsp. butter

Boil split peas with saffron, salt and garlic. Do not allow to get too soft. Pass through a grinding mill ( or you can use a blender on a low setting) and fry in 2-3 tbsp. butter. Add geera (cumin) and salt to taste. Cool! Knead flour with baking powder and water to form a soft dough. Rub oil over dough and leave to rest. Cut dough into 6 or 8 pieces according to the size of the baking stone (tawah) or other flat iron surface. Make round balls; open and in the center place about 3-4 tbsp. of prepared peas filling. Pull the sides and close up. Heat baking stone, frying pan or griddle on medium heat; roll out filled ball of dough very thinly. Grease the stone or griddle and put the rolled out roti on to cook. Cook one side turn over and grease, turn over again and grease. Continue with the other filled balls. Do not allow to brown too much.
