  • There are four basic kinds.
  • They are fruit, cream, custard, chiffon.

  • May have a solid top crust.

  • They often have a meringue topping

  • Pumpkin pies are a good example

  • Are usually one crust pies.
  • They are light and airy.

PREPARING PASTRY

  • Pasties can be cooked in an oven or microwave.
  • Using the biscuit method, mix the pastry.
