If you don't measure carefully, the pastry won't be good.
Flour, fats, and other liquids need to be measured correctly.
Fat coats flour in waterproof materials so it doesn't get too much water.
Gluten forms a framework. This holds air and steam during baking.
Liquid hydrates so gluten can form. Too much/little will not work.
