Old Fashion Potato Salad

A delicious summer recipe!

OLD FASHION POTATO SALAD

INGREDIENTS

  • 4 lbs. red potatoes, washed and cut into 3/4inch chunks
  • 1/3 cup cider vingar
  • 1/2 teasp. Each- salt & pepper
  • 3/4 cup mayonaise
  • 1/2 cup sour cream
  • 1 tbsp. Dion mustard
  • 6 hard bolted eggs, coarse lay chopped
  • 3 stalks celery-diced
  • 1/2 cup chopped red onion

STEPS

  • In a large pot, cover potatoes with water. Bring to a boil. Reduce hear and cook 12 to 15 minutes or until tender, drain. Toss warm potatoes with vinegar, salt and pepper. Cool to room temperature.
  • In a large bowl, whisk together mayonnaise, sour cream, and mustard. Add potatoes, eggs, celery and onion, tossing gently to combine.
  • Refrigerate until ready to serve.

Makes 12 cups
Each (1/2 cup serving)- 126 calories, 5 grams of fat, 4 grams of protein, 17 grams. Of carbs.
