How can we make cupcakes for people that have dietary problems?

BACKGROUND INFORMATION OF CUPCAKES

  • First mention of the cupcake can be traced as far back as 1796
  • Written in American Cookery by amelia simmons
  • In 19th century, there were two different uses for the name cup cake or cupcake
  • Cupcake shave become more than a trend over years, they're become an industry

I will be making two different kinds of cupcakes for people that have dietary
problems
The first one is gluten free cupcakes
The second one is vegan cupcakes
Last I will be making the regular cupcakes too

GLUTEN FREE CUPCAKES

  • Background Information:
  • A substance present in cereal grains, especially wheat, that is responsible for elastic texture dough
  • Celiac Disease- body mounts an immune response that attacks the small intestine. Lead damage on villi, small fingelike projections line the small intestine when villi get damaged, nutrients cannot be absorbed properly into body.
  • Treatment - strict gluten-free diet

VEGAN CUPCAKES

  • Background Information:
  • A person who does not eat or use animal products
  • Reasons bwhy people might go vegetarian :
  • Weight loss and improved health
  • Safety of meat

VEGAN CUPCAKES

  • Moral or spiritual issue
  • Suffering of animals
  • Dont like meat

VANILLA CUPCAKES INGREDIENTS

  • 1-1/2 cuos of all-purpose flour
  • 1-1/4 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 stick of unsalted butter
  • 1 cup of sugar

VANILLA CUPCAKES INGREDIENTS

  • 2 large eggs at room temp.
  • 2 teaspoons of vanilla extract
  • 2/3 cup of whole milk room temp.

GLUTEN FREE INGREDIENTS

  • 1-1/3 of gluten free flour blend
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 of salt
  • 1/2 cup of vanilla coconut milk beverage

GLUTEN FREE INGREDIENTS

  • 1/2 cup of water
  • 1 tablespoon of white vinegar
  • 1 cup of organic cane sugar
  • 1/3 cup of sunflower seed oil (or other neutral baking oil)
  • 1 tablespoon of vanilla extract

VEGAN CUPCAKES INGREDIENTS

  • 1-1/4 cuos of all purpose flour
  • 1/2 cup plus 1/3 cup of white sugar
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 2/3 cup of unsweetened almond milk

VEGAN CUPCAKES INGREDIENTS

  • 1/3 cup of canola oil
  • 2 tablespoons of apple cidervor white vinegar
  • 2 teaspoons of vanilla extract
