MEASURING INGREDIENTS

  • If you don't measure carefully, the pastry won't be good.
  • Flour, fats, and other liquids need to be measured correctly.
  • Fat coats flour in waterproof materials so it doesn't get too much water.
  • Gluten forms a framework. This holds air and steam during baking.
  • Liquid hydrates so gluten can form. Too much/little will not work.
