Taking Orders

  • Smile! Even when you're on the phone.
  • Be specific! Write down everything.
  • Repeat the order to the guest.
  • Put it in immediately!
Smiling helps to relax your voice and you become a more pleasant person to talk to. Trust me, people notice.

Even if you're putting the computer in on the computer, try to remember what you can't put in and then write it down on the ticket! This is usually things like steak sauce or rolls.

Do NOT forget to repeat the order. Most important are steak temps!

Place the order asap! If someone else is on the computer when you take the order then wait for them to finish. Getting distracted by something is an easy way to forget about that order.

Upsell and suggest!

The phone can't ring more than once, and a person can't be on hold for more than 30 seconds!

Prepping the Order

  • Start making the order as soon as possible.
  • Salads, loadeds, etc, should all be ready before the food comes out.
  • Once the food comes out, double check it, bag it up, staple the ticket to the bag, put the order on the shelf.
Be sure not to make salads too big. This happens ALL the time.

Do NOT forget extras like loadeds, butters, etc.

If you can, check items off of the ticket as they become ready, this way we KNOW that we have everything. Sometimes people don't want us to show them everything, so it helps if we are 100% sure that everything is there.

Also, sometimes you'll have multiple entrees, just cooked differently. In these cases, write on the box how it is cooked!

Selling the Order

  • Show the guest everything!
  • Tell them what it is.
  • Ask if they need anything else.
  • Pay them out!
  • Tell them to have a great day!
Some guests will bring discount cards or appetizer coupons. In these cases, call a manager to togos or scan the coupon.

WWW/Early Dine

  • Every Wednesday is Wild West Wednesday!
  • Memorize the Early Dine Menu!
The button for WWW 8oz Sirloins is under Specialties! They're the same price as a 6oz sirloin, so always try to sell them when guests ask for a 6oz.

Early Dine is Monday-Thursday from 3-5. Get it memorized! If you can't, at least check if what they want is on it.

How's Your Attitude?

  • Always be patient and courteous.
  • Don't get rude with a guest just because they want something extra.

Did Something Go Wrong?

  • If anything goes South, call a manger to togos.
If you feel like you cannot deal with a situation by yourself, get a manager. This may include guests being rude, a mess-up on an order, etc.

If food is taking longer than the quote time, offer the guest a drink while they wait. If the time is excessive, then apologize and grab a manager. For instance, if a ticket takes longer than 20 minutes, get a manager.

Opening?

  • Fill everything!
  • Make sure to stock extras in the cooler.

Closing?

  • Restock as much as you can.
  • Clean off all counters.
  • Scrub the floors.
  • Cut box tops.
  • Label/Relabel everything.
Restock portion cups and lids. Make sure pre-close restocks everything else; dressings, butters, loadeds, etc.

Use Scrubbin' Bubbles in basically everything.

If any salad mix, cheese, eggs, etc, are left over, check the labels and then put them back in the walk-in.

Clean up the togo stand itself and sweep the front.

Everything Else

  • Gift cards can be anywhere from $5-100
  • Prime Rib = Au Jus
  • Pivot points!
Literally, we can make a gift card anywhere between $5-100. We've had people get cards for $38.25 before. Also, gift cards are under the drawer. Always give a receipt for the card.

Always remember what comes with different entrees!

Pivot points keep things organized.
