Food Allergies

Allergy: An immunologic response to an allergen that results in reproducible symptoms that occur immediately (within a few hours) and with every exposure . May be characterized by:
• Hives
• Swelling
• Difficulty breathing
• Difficulty swallowing
• Vomiting
• Low blood pressure
• Anaphylaxis
• Death

Food Intolerance

Intolerance: A non-immunologic response to a substance (food) that causes gastrointestinal symptoms with exposure. The reaction is not always reproducible, may be quantity related, can vary over time, and not always immediate . May be characterized by:
• Bloating
• Gassiness
• Heartburn
• Vomiting
• Constipation
• Diarrhea

Food Sensitivity

Sensitization: The detection of IgE (positive test result) towards a specific allergen that does not take the history into account

Can be detected with:
Skin prick
Intra-dermal test
Blood test
Ig: Immunoglobulin, or antibody, which forms part of the body’s immune defense system
