PEPPERONI & SALAMI

Pepperoni, also known as pepperoni sausage, is an American variety of salami, usually made from cured pork and beef mashed together

the pepperoni mixture is stuffed into casings usually made with the intestinal tract from a pig or cow. A mechanical stuffer is often used to stuff the pepperoni mix into the casings. After the mix is stuffed into the casing, each pepperoni filled link of the casing is sectioned off with a piece of string or rope.

The organoleptic and other properties of dry sausages depend not only upon the products of sugar bacterial fermentation but are also strongly influenced by biochemical and physical changes occurring during the long drying or ageing process

Pepperoni is most commonly used in pizza as a topping. Pepperoni Is used in the company "hot pockets". Pepperoni is also used in subway as a ingredient. Pepperoni can be used in many ways.

Pepperoni Is used in many recipes most common is pizza for a topping and other restaurants like subway use it too

Turkey is a common used substitute.
