Coconut Haupia

Enjoy cooking Hawaiian food anywhere!
Haupia is a coconut Hawaiian dessert. It is a traditional Hawaiian dessert that locals often enjoy when they get together.

Ingredients

  • 700mL Coconut Milk
  • 230g Sugar (not powdered)
  • 1 drop Lemon extract
  • 700mL Water
  • 113g Cornstarch
It should be frozen coconut milk that is defrosted. Lemon extract can be subsituted for 2 drops of lemon juice.

Directions

  • Add coconut milk, sugar, lemon extract, and 475mL of water into pot
  • Cook on medium heat
  • Mix together cornstarch and 240mL of water in bowl
  • When coconut mixture boils, add cornstarch and water mixture
  • Reduce to med-low heat. Stir for 3 mins without stopping.
The mixture of cornstarch and water is also referred to as a slurry. When adding slurry, mix it in quickly.

Directions II

  • Pour into pan
  • Cover with plastic wrap. 
  • Refrigerate for at least 3-4 hours. 
  • Cut into 5cm squares. 
  • Put onto plate. Add fresh fruit for decoration!
When covering with plastic wrap, make sure the wrap is touching the haupia completely. It is better to refridgerate that haupia overnight for best results.
